Banana waffles
I made waffles for breakfast this morning (well, there’s only one in the house now, so it’s looking like lunch as well). It’s a simple thing, here’s the recipe, transcribed from my late wife’s hand.
Ingredients
- Dry Ingredients
- 250g all purpose flour
- 3tsp baking powder
- 2tbsp sugar
- ¾tsp salt
- Liquid Ingredients
- 3 eggs
- 1½ cups milk or oat milk
- 1 cup mashed banana
Steps
- Sift flour, measure and resift twice with the other dry ingredients.
- Beat eggs, add liquid and stir in sifted dry ingredients.
- Add melted shortening and mashed banana.
- Continue beating all together with a rotary beater until the batter is free from lumps.
- Bake on hot waffle iron until golden brown.
